Method
- Toast the vanilla bean over medium heat until fragrant and lightly browned
- Combine sugar, water, toasted vanilla bean (split lengthwise), and vanilla bean paste in a small pot
- Simmer until syrup reduces by 1/3 and becomes slightly thickened (5-7 minutes)
- Let syrup cool completely
- Shake 1-2 shots of hot espresso, 2-3 ice cubes, and 2 tbsp of the cooled syrup in a shaker until chilled
- Strain into a glass filled with ice
- Top with 1/2 cup oatmilk and stir gently to combine

Use fresh, plump vanilla beans for the best flavor
Substitute oatmilk with any plant-based milk of choice
Strong brewed coffee can replace espresso if needed
