  • 2 tbsp strawberry puree
  • 1 tsp matcha powder
  • 2 oz hot water (160-175°F)
  • 5 oz milk of choice (oat or almond recommended)
  • 3 oz raspberries
  • 3 tbsp heavy cream
  • Sugar to taste
  • 1 tsp lemon juice
  • 1/2 tsp lemon zest

Method
 

  1. Mash strawberries with sugar in a blender and let macerate for 5 minutes.
  2. Add lemon juice and zest to the strawberries and blend until smooth; chill in the refrigerator.
  3. Simmer raspberries with a splash of water and sugar in a saucepan over medium heat for 15 minutes.
  4. Strain the raspberry mixture to create a smooth syrup and let it cool completely.
  5. Whisk matcha powder and hot water in a small bowl until a light froth forms.
  6. Combine the whisked matcha with milk in a glass.
  7. Layer the strawberry puree at the bottom of a serving glass, add ice, then pour the matcha-milk mixture over the top.
  8. Drizzle the raspberry syrup and top with whipped cold cream.
