- Combine dark brown sugar, water, cinnamon sticks, vanilla paste, and kosher salt in a saucepan. Bring to a simmer over medium heat.
- Reduce heat and let the mixture steep for 30 minutes as the cinnamon infuses the syrup. Strain and discard cinnamon sticks.
- Brew espresso and let cool slightly. Add ice cubes to a glass, then pour in 1/2 cup chilled oat milk.
- Stir in 2-3 tablespoons of the cinnamon dolce syrup (adjust to taste). Top with cooled espresso and remaining oat milk.
- Stir well and garnish with cinnamon or vanilla paste for serving.
