Ingredients
  

  • 1 cup dark brown sugar
  • 1 cup water
  • 3-4 cinnamon sticks
  • 1 teaspoon vanilla paste or extract
  • 1 pinch kosher salt
  • 4 shots espresso or 2 brewed espresso cups
  • 2 cups oat milk (chilled)
  • Ice cubes

Method
 

  1. Combine dark brown sugar, water, cinnamon sticks, vanilla paste, and kosher salt in a saucepan. Bring to a simmer over medium heat.
  2. Reduce heat and let the mixture steep for 30 minutes as the cinnamon infuses the syrup. Strain and discard cinnamon sticks.
  3. Brew espresso and let cool slightly. Add ice cubes to a glass, then pour in 1/2 cup chilled oat milk.
  4. Stir in 2-3 tablespoons of the cinnamon dolce syrup (adjust to taste). Top with cooled espresso and remaining oat milk.
  5. Stir well and garnish with cinnamon or vanilla paste for serving.

Notes

For non-dairy alternatives, use almond or soy milk. Adjust syrup quantity to control sweetness.
Steeping cinnamon sticks while the syrup cools ensures a mellow, aromatic flavor. Use cassia cinnamon for stronger flavor.
Store syrup in an airtight container for up to 2 weeks in the fridge.
