- Stir gently to ensure all grounds are fully saturated.
- Secure the lid and place the jar in the refrigerator to steep for 12 to 18 hours.
- Line a fine mesh strainer with several layers of cheesecloth and place it over a large pitcher.
- Slowly pour the coffee concentrate through the strainer to remove silt.
- Whisk together the coconut milk, maple syrup, and vanilla extract in a small bowl until smooth.
- Fill two glasses with one cup of ice each.
- Divide the coffee concentrate between the glasses and top with the coconut-vanilla mixture, stirring gently to combine.
Notes
Ensure the coconut milk is well-shaken for a consistent, creamy texture. You can store the coffee concentrate in the refrigerator for up to 5 days. For a stronger coffee flavor, steep toward the 18-hour mark.
