Ingredients
  

  • 1 cup coarsely ground coffee (dark roast recommended)
  • 4 cups cold filtered water
  • 1 cup canned coconut milk, shaken well
  • 2 tablespoons maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups ice cubes

Method
 

  1. Mix the coarsely ground coffee and cold filtered water in a large glass jar.
  2. Stir gently to ensure all grounds are fully saturated.
  3. Secure the lid and place the jar in the refrigerator to steep for 12 to 18 hours.
  4. Line a fine mesh strainer with several layers of cheesecloth and place it over a large pitcher.
  5. Slowly pour the coffee concentrate through the strainer to remove silt.
  6. Whisk together the coconut milk, maple syrup, and vanilla extract in a small bowl until smooth.
  7. Fill two glasses with one cup of ice each.
  8. Divide the coffee concentrate between the glasses and top with the coconut-vanilla mixture, stirring gently to combine.

Notes

Ensure the coconut milk is well-shaken for a consistent, creamy texture. You can store the coffee concentrate in the refrigerator for up to 5 days. For a stronger coffee flavor, steep toward the 18-hour mark.
